Simple Summer Salad
KALE Salad with Pecans and Goji berries or Beets:
Sweet Potato, Asparagus or Avocado are great add ons!
I paired it with scrambled egg
Ingredients:
- 3 cups Kale
-1 Cup Pecans
- 1/2 cup Goji Berries or Beets
1 Tablespoon Extra Virgin Olive Oil
1/4 cup Onion
1 Garlic Clove
** Secret Ingredient that makes it super yummy; Coconut Aminos** you can purchase at Trader Joes
Directions:
Heat oven to 350
Place Kale on a Cookie Sheet, spread your Olive Oil, Onion, Garlic and Pecans on Kale.
Bake for 10-12 min. (depending on your oven heat)
When out of the oven, add your Goji Berries or Beets and Serve.
If the RAW version is what you would like, do not bake.
Add Sea salt to taste.
